if this group believes it has “immunity from US law,” then why were they being “extra careful to not violate any federal laws of the United States?”

Because it's a lot more fun to argue about how you're a sovereign citizen and immune from the laws of the United States among a group of similarly drunk and high friends than trying to use it as a legal defense. There does seem to be something about the mythology of the US that encourages this kind of revolutionary cosplay among a certain number of its citizens.
